I am visiting with my Daughter and her family in MO..... Yesterday was a rainy and cold day here. .....so we had potato soup for dinner. Here is my recipe for some great soup!

Potato Soup

4 slices of bacon
2 tbsp. butter
1 cup of onions
1 cup of diced celery
4 cups of diced potatoes
2 cups of whole kernel corn
1 or 2 pints of heavy whipping cream
salt and pepper

Chop bacon and cook until crisp. Remove bacon from pot and add the 2 tbsp. of butter to the bacon drippings. Add the onions, celery, salt and pepper, saute for 2 or 3 minutes. Add diced potatoes and just enough water to barely cover. Cook for 15 minutes then add corn, cream and bacon. Cook until potatoes are tender! Adjust the salt and pepper along the way according to your taste!
