Well today is Thursday and I have been busy getting my new place in order.  I am slow but determined! My Son wants my recipe for Scotch eggs so here goes:

Boil your eggs ( this is how I do that...I put the eggs in cold water and bring to a rapid boil, then put lid on pan and turn off the burner.  Let them sit covered for at least 20 minutes..

4 hard boiled eggs (peeled)
3 Tbsp flour
I package of Jimmy Deans sausage (hot or regular) cut the roll into 4 parts.
Panko bread crumbs (about 2 cups
1/4 cup of parmesan cheese
Salt and pepper
Mix the bread crumbs, parmesan cheese, salt and pepper.

Roll the eggs in the flour, then cover the egg completely with a fourth of the sausage.
Roll in the bread crumb mixture.
Place of a rack on a cookie sheet.
Bake at 375 or 400 degrees for about 20 or 30 minutes...

This is my recipe for Chicken Corn Soup.  My son loves this soup and his lady is a really good cook, so between the 2 of them they will make a good soup for sure....
Love them both so much!!
Here is the recipe:



Chicken Corn Soup
Make Chicken stock (using 1 whole chicken, celery and onion roughly chopped) cover with water and cook for 1 or 2 hours. Strain the broth and let chicken cool before removing meat) Toss away the celery and onions.
Sauté in pot 1onion and 2 stalks of celery (chopped)
Add the stock and 1 tsp of Better than Buillion.
Add 2 diced potatoes. (Cook until tender)
Add I bag of whole kernel corn or 2 cans of whole kernel corn.
Add some parsley flakes about 2 tablespoons.
Add 2or3 sliced hard boiled eggs
Salt and pepper to taste…


You can also use your already made chicken stock or boxed chicken stock and add some store bought cooked chicken.

Well here I am again.  I am certainly not good at posting on a regular basis! I am visiting in Chicago and enjoying every minute of my time with family! For my daughters birthday we had crab cakes and fried oysters!!!  I always make homemade salad dressing and here is my recipe:

5 tbsp sugar
1 tbsp plus 1 tsp flour
2 tsp yellow mustard
Pinch of salt
2 eggs (beaten)
1/4 cup vinegar
3/4 cup of water
1/4 cup butter
1 cup regular mayo (if you like)

Thoroughly mix sugar, flour, mustard, salt and eggs.  Set aside.

In sauce pan Combine vinegar, water and butter.  Bring to boil.   Add first mixture and cook a few minutes more.  Stirring constantly.  ( be sure to temper the first mixture with a few spoon fulls of the mixture in sauce pan to prevent scrambling the eggs) . Remove from heat and beat well.  
When ready to use add regular mayo if you like...

P.S. I use this on cold slaw and potato salad and many other dishes....

I can of deviled ham
1 package cream cheese

Mix the two  together and enjoy!  So simple but delicious!!

Today is June 19, 2014.  I am very happy to be in a warm climate as I am having some arthritis problems.
Comes with the wonderful world of getting older.  Today was a great day for me as I accomplish what I wanted to get done.  Now it is on to dinner and then making some cookies for my neighbor.  I am making Palmiers.  Here is my recipe:

I package of puff pastry
Cinnamon
Sugar
Orange zest

Preheat the oven to 400 degrees.

Mix the sugar, cinnamon and orange zest in a bowl.  Put some of the mixture down where you will be rolling out the puff pastry.  Lay the puff pastry out and the add some of the mixture on top of pastry.  You now have mixture on both sides...roll the pastry a few times to work the mixture into the pastry.  then you must fold the puff pastry. With the seam of the pastry in the middle, roll each side half way to middle, then fold to the middle.  Then take the one side an put on top of the other side.  Refrigerate for about 30 minutes.
When cooled cut the pastry in about 1/4 inch pieces and lay on parchment paper lined cookie sheet.
Cook for about 6 minutes then take out of the oven and turn each one over with a spatula.  Cook for another 6 minutes or until golden brown....

I believe this to be the best sandwich ever!  I highly recommend  that you give it a try.  I found the recipe and wanted to share with you.

Blue Bayou Monte Cristo Sandwich

Serves 4
Ingredients:
1 egg
1 3/4 cups plus 2 tablespoons water
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
8 slices egg bread (challah works well), sliced 1/2-inch thick
8 thin slices ham
8 thin slices turkey
8 thin slices Swiss cheese (make it meatless by removing turkey and ham and including a couple more cheese choices!)
3 cups canola oil
Confectioners sugar
Blackberry preserves
Directions:
Line a cookie sheet with paper towels; set aside.
Whisk the egg and water together in a mixing bowl. Add flour, salt, and baking powder and whisk thoroughly for 2 to 3 minutes or until smooth, scraping sides of bowl.
On one slice of bread, arrange 2 slices of ham, turkey, and cheese, covering the bread evenly. Place another slice of bread on top and slice each sandwich in half diagonally.
Heat oil to between 365 degrees F and 375 degrees F in a 10-inch pan. Do not let the oil reach a higher temperature than this; if the oil starts to smoke, turn the heat down. Dip half of the sandwich into the batter, allowing excess to drain, and very carefully place into the oil.
Repeat with the other sandwich half. Cook 3 minutes on each side, or until golden brown. Place the cooked sandwich on the prepared cookie sheet in a warm oven until ready to serve. Repeat with the other three sandwiches.
Cook one at a time, and allow the oil to reach the desired temperature between each.
Sprinkle with confectioner’s sugar and serve with blackberry preserves on the side.

I had a wonderful lunch yesterday with my friends.  We enjoyed eating and chatting for hours.  What a joy to have just good friends in my life.
We had this great salad that I thought I would share with you:


1 package of cream cheese (softened)
1 cup sour cream
1/3 cup sugar
2 teaspoons of vanilla
2 pounds seedless red grapes
2 pounds seedless green grapes
Glazed walnuts ( enough to cover top of bowl)

In bowl, beat the cream cheese, sour cream, sugar,and vanilla
Add grapes and toss.
Transfer to serving bowl and refrigerate until serving.
Sprinkle with walnuts and serve.
